Serving size, total carbs, fiber, added sugars, sodium — learn which label numbers actually move your blood sugar and which you can mostly ignore.
Start with Serving Size
Every number on a nutrition label is calculated per serving, and the manufacturer's idea of a serving is often smaller than what you eat. A serving of granola might be a third of a cup; most people pour a full cup. If you eat three servings, you multiply every other number by three.
Before you read anything else, ask: how many servings am I actually eating? This one step corrects more blood sugar surprises than any other label-reading skill.
Total Carbohydrate — The Number That Counts
For diabetes, total carbohydrate is the single most useful number on the label because carbohydrate has the largest, most direct effect on blood glucose. It includes starches, sugars, and fiber combined.
Two foods with identical calorie counts can affect glucose very differently based on their carb content. When you are deciding between two breads or two yogurts, the total carb per serving, adjusted for fiber, is usually the deciding factor.

Dietary Fiber — Subtract for Net Carbs
Fiber is carbohydrate your body doesn't fully digest, so it blunts the glucose response instead of spiking it. A useful shortcut is net carbs: total carbohydrate minus dietary fiber. A bread with 15g total carb and 4g fiber behaves more like 11g of net carb.
Higher-fiber foods also tend to have a lower glycemic load, because the fiber physically slows digestion. This is why whole-grain and legume-based foods are so valuable for glucose stability.
Added Sugars — The One to Minimize
The label now separates total sugars from added sugars. Added sugars are the ones mixed in during processing: soda, candy, sweetened yogurt, flavored oatmeal. The American Diabetes Association advises limiting added sugars because they deliver glucose with no fiber, fat, or protein to slow it down.
Naturally occurring sugars in whole fruit and plain dairy come packaged with fiber or protein, which changes how they behave. The added-sugar line is the one to watch most closely.
Sodium — The Blood Pressure Link
More than half of people with diabetes also have high blood pressure, so sodium matters even though it doesn't affect glucose directly. Aim for foods that keep you toward 2,300mg of sodium per day overall, lower if your clinician has set a tighter target.
Canned soups, breads, and processed meats are common hidden sources. The sodium line on the label is how you spot them.
Putting It Together: A Quick Walkthrough
Compare two slices of bread. The white version might show 14g total carb, 1g fiber, 1g added sugar. The whole-wheat version might show 13g total carb, 3g fiber, 0g added sugar. The whole-wheat slice has fewer net carbs and more fiber, a lower glycemic load for the same bite.
