Two Fats, Opposite Metabolic Stories

A 2026 review in Trends in Endocrinology & Metabolism, led by researchers at the University of Barcelona, argues that the type of dietary fat matters more than the total amount for type 2 diabetes risk. The comparison centers on two fatty acids: palmitic acid and oleic acid.

Palmitic acid — common in palm oil, butter, and many processed foods — was linked to impaired insulin sensitivity. Mechanistically, it promotes the buildup of potentially toxic bioactive lipids, low-grade chronic inflammation, and dysfunction in the endoplasmic reticulum and mitochondria. Oleic acid, the main fat in olive oil, showed the opposite pattern: it supports storage of fat in forms that interfere less with cellular function, helping preserve healthy insulin signaling in liver, muscle, and adipose tissue.

The practical translation is not 'eat less fat' but 'change the fat mix': favor oleic-acid-rich sources (olive oil, avocado, most nuts) over palmitic-acid-heavy ones (palm oil, butter-heavy processed snacks, many baked goods).
